Vegan (Marshmallow-Free) Peanut Butter Rice Krispie Treats
As far back as I can remember I have LOVED rice krispies treats.
I mean, the ones from the blue box— the more artificial the better. But every time I tried to make them at home, I would get hung up on the marshmallow flavor. Believe it or not, I am not a fan of marshmallows (except in the occasional s’more. I’m not a monster). So, I’ve been trying for SO LONG to figure out a way to make a delicious treat at home that doesn’t involve the marshmallows. And today I had a brain blast. Peanut butter!
I melted peanut butter, agave and a dash of maple syrup in the microwave until it was thin and bubbling and mixed it together with crispy rice cereal. Let me tell you, it did not disappoint, even a little bit.
Vegan (Marshmallow-Free) Peanut Butter Rice Krispie Treats
Ingredients
- 4 1/2 cups of crispy rice cereal
- 3/4 cup salted creamy peanut butter.
- 1/2 cup of agave (or honey if not vegan)
- 1 tbsp maple syrup
Instructions
- Line a 9 inch brownie pan, casserole dish or 2 loaf pans with parchment paper.
- Pour cereal into a large mixing bowl.
- Add peanut butter, agave and maple syrup into a microwave safe bowl.
- Microwave for 45 seconds (or more, depending on your microwave), until all of the components are melted and easy to mix together.
- Pour mixture over cereal and mix until all the pieces of cereal are coated.
- Pour everything into your pan and flatten all the way down tightly with your hands or a spatula.
- Put the pan in the freezer or fridge (depending on how patient you are) until it is fully hardened.
- Pull up parchment paper and cut into 16 pieces.
- Keep stored in the fridge or refrigerator for best texture.
