Tex-Mex Potato Pie
Some of my best recipe ideas evolve from combining things I love.
And if there’s two things I love, its Tex-Mex and casseroles. Bet you can’t guess what I did…..just kidding, I’m sure you figured it out… I combined them.
Until I met my current partner, I never ate Tex-Mex. My family generally stuck to the recipes we knew, but Joe opened my eyes and honestly it’s one of the reasons I love him, among many others of course. Until a few years back, I only ate it out but as a vegetarian you have to be creative.
I’m not going to sit here and lie to you all and say this was a stroke of genius or something I dreamed up with any sort of real inspiration… I just sort of did it. But I AM very proud of this simple concoction.
Throw together a bunch of Tex-Mex ingredients, top it with potatoes and cheese and… well, thats it.
Whats not to love?!
Tex-Mex Potato Pie
Ingredients:
- 3 medium yukon gold potatoes
- 1 container Trader Joe's Soy Chorizo or lentils or another meat substitute
- 1 medium yellow onion
- 1 bell pepper any color
- 3 tbsp olive oil
- 1 can black beans rinsed and drained
- 4 cloves garlic
- 1 cup shredded cheddar cheese
- 1/2 cup hot sauce
- salt to taste
- cumin to taste
- red pepper flakes to taste
- paprika to taste
- chili powder to taste
- onion powder to taste
- garlic powder to taste
Instructions:
- Heat oven or air fryer to 350 fahrenheit.
- Wash, dry and dice potatoes, toss with olive oil, salt, red pepper flakes, chili powder and cumin.
- Add potatoes to oven for 45 minutes or the air fryer for 25, turning halfway through.
- Heat a pan to medium low heat.
- Add olive oil, chopped onions, garlic, bell pepper, salt, cumin, onion powder and garlic powder. Cook until soft.
- Add soy chorizo, cooked lentils or other meat substitute to the pan. Allow to cook through.
- Add rinsed and drained black beans and hot sauce.
- Add this mixture to a casserole dish.
- Add a layer of cheddar cheese, a layer of the cooked potatoes and then a light layer of cheese again.
- Serve with sour cream, guacamole or another of your favorite toppings. Enjoy!
